The other was
to try and combat the problem that they were having
with the larger half-gallon flagons, where you'd get a terrific amount
of oxidation in the wine when the flagon was half empty, and so he came up with
this extraordinary idea of, why don't we put the wine inside a
plastic bag, inside a cardboard box, and as the wine is decanted
out of the plastic bag, the plastic bag
simply sinks onto the wine, and so you get
no air contact at all, and so that oxidation problem
goes away
