I think that goujon
is a great success. Sometimes when you're doing it in
deep fat, you overcook the fish. You haven't overcooked the fish. That's very original
and, I think, very good. I was very dubious about a mackerel
goujon, but it's worked really well. You've got a lovely crunch
on the outside and the two fish go side by side together,
the two different techniques. So your pickled mackerel
cuts through the richness of the fried mackerel beautifully. But the garnishes have
really let that down. Yeah. Dipa, please bring your plates up
