I will try and attempt to make some
mint sauce, but I'm also adding a bit of spice
as well. I've never made this before, so it's
not my recipe, but I'm going to have a go. Mm. I've just seasoned the beef in
horseradish and I've just coated it in
breadcrumbs, just to help absorb any of the juices that might leak out
when it cooks. I don't like it too overdone. It
should be nicely pink in the middle. We want the pastry not to be soggy. He's putting a little bit of
breadcrumb, I think, to absorb. That's smart. Because you always get
a bit of bleed, don't you? Absolutely, yeah. I think, you know,
he knows the potential pitfalls and he's doing things to make sure
they don't happen
