It's quite hard to squish it down,
because it says to... ..press to flatten and reseal
with your hands, but I don't know what it means
by "reseal". Once the butter's in the chicken,
we go flour, get rid of the excess, egg wash, scrape it off. Then we repeat that process twice, and that creates
the perfect sealant, if you like, to keep everything in,
and then we go into the breadcrumbs, to get that nice crunch. I want my chicken to cool down
before I fry it. You're cooling it? Yeah, in the
fridge, so the butter goes hard, no? I've never cooked any of these,
