It's really quite tricky
getting that consistency right and they've got to go on watching it until it does coat
the back of the spoon. If it's too runny, you'll get a pool
round the outside which is not what we want. That looks like a proper hollandaise
that Dipa has got on. I just hope it doesn't curdle
cos I know it can curdle. So, the hollandaise is done. It says keep it warm. No, it's curdled. No, I've made a mess and it curdled. It's gone. Why has it gone? I don't know. In the heat,
