I've made rostis using
the onion squash, with a little poached egg on top, some chorizo and
spiced butternut puree. The fact that you've used two
different types I think is very clever. And you've used the right one
for each job. I'm not too keen on the smearing
on the plate or doing a zigzag of something,
you know. To me, that's cheffy,
it's restaurants. The egg hasn't really worked. I feel like the chorizo's a bit
of an afterthought. So, as a whole dish,
it's not quite there for me
