That's a very different burger. I thought it was going to be
difficult to eat - it's not. And the bun is as light as light. It's beautiful. Thank you. There's a lot of tricky things here
to do - making tempura, steaming the bun, flash pickling and then that meat, pressure-cooked, so all within an hour and a half. That's a pretty solid burger. Thank you
