The ballotine, you know, it's not an
easy thing to make, and you've made it really well. The sauce has a beautiful flavour
that complements it. I'm just not 100% sure the butter
bean puree works. It's got a kind of a floury texture. OK. It looked simple. It's anything
but simple. And the flavours throughout your
sauce are incredible. Thank you. You've absolutely cracked
