The ginger flavour is coming through
on everything. I love the sweet onions underneath. You've left the skin on, and it's very difficult for it to be crisp
when it's underneath. Your sea trout's
cooked OK. It's nice and moist in the middle,
it's just that skin - if it's not crispy, it's unpleasant. The ginger comes through nicely. I think that's perfectly spiced. Flavours that we're not necessarily
used to getting from you, but I think you've done them very
well
