Tobi is taking an unusual approach
to his roast. Tell me what you're up to. So, I've just stuffed the skin
with rosemary and lemon zest and there's a bit of butter in
there with some parsley, and I'll make a salt meringue
and that will encase the chicken and keep all the juices
on the inside. We don't get that
lovely crispy skin? Not on this, unfortunately. However, I will give you
some crispy skin. I know you like some crispy skin,
so there will be some. I just think of a classic roast,
I would just put that in the oven, with the butter on the outside -
but let's just see how it goes. Thank you
