Why one hour to do two fishes? Yeah! My family would never demand
my food in one hour. No! Time is proving
to be a cruel mistress. It is! I want to see more refined stuff
from Philip. He can be a bit clunky
and a bit rustic, and I want to see him taking
on board that feedback. I'd like to see, you know,
a bit more prettiness in the food. Oh, that just hit me. I love the sound of Pippa's ceviche. I spent some time in Peru,
and I love ceviche, but... ..an oily fish doesn't necessarily
lend itself particularly well because it's got a natural barrier to all the acidity of the lime
or the lemon. So I don't know
how well that's going to do. My second dish is going to
be pan-fried mackerel - very simple, very plain - on a bed of fennel
with a bit of dressing and some creamy potatoes
on the side. Cooks, you've four minutes left. Please give us more
