fantastically well. And all of the ingredients you've
chosen, I think, are brilliant. Girolle mushrooms, an absolute
favourite of mine, Jersey Royals have got a natural sweetness.
I'm impressed with that dish. The sauce with the miso is quite
rich and you've got lemon aioli, but I don't think you need both. Right. And breathe. And breathe
