you have to be very careful, because you have so many ingredients. Just on my station,
I've got over 20 ingredients. And when you're working
with that many ingredients, you could just add too much of one thing, and then you're fighting
to get the balance right. That's what a mole is.
The mole is a star of the show. And it's all about balance,
and so you have to constantly be tasting. {\an8}And it's kind of like a little bit
of a game just trying to get that right. {\an8}- [Caroline] Twenty minutes, guys.
