the potatoes, onions and peppers are soft and golden, Nestor
drains the oil from the pan. This is a very delicate operation,
eh? Yeah, this is
quite a dangerous operation. And then, Nestor's real trick - he adds the hot, fried mixture
to about 15 beaten eggs... ..and not the eggs to the pan,
as you would expect. Oh, my goodness me! He was going to do that. He done it
exactly the opposite way that I thought
he was going to do it. Yeah. And he's starting to cook.

almost. Yeah. Almost. For flavour, Nestor coats the pan
with extra virgin olive oil, and then the fun really starts
