[Alex] Um, okay, so we have to use 'pus. [Ash] Yeah, dude. How am I gonna cook
an octopus in an hour? Yeah. The only time we cooked octopus
was at Dinner by Heston and we cooked it for four hours. Um... Okay. The principle of octopus is
it's either a really quick cook -or a really slow cook.
-Like squid. -Basically there are two ways to cook it.
-Yeah. In Australia and probably South Africa, you don't get much octopus. So, that's not something
I'm incredibly familiar with. There's the traditional one
that I make at my restaurant. I don't know what you think. I want to keep it simple. I'd like to incorporate
elements of Mexico. Maybe a little salsa molcajete? [Colibri] You're comfortable
cooking octopus? - Hundred percent. How about you?
-Yeah. Chef Colibri and I have this great passion for our countries' food. And we just want to take it
to the next level and show people what our cuisine is about and how far we can take this
