to present the cassava, in the most pure flavor that we could. This is the dish that speaks
most of our style. It's an accumulation of our experiences, of all the different restaurants
we've worked at. This is us on a plate. I'm American, I'm a mutt, so I don't have, like, any real
cultural heritage, so I've just absorbed everything
from all my travels. In my restaurant, I prepare
cassava gnocchis. So this is very familiar
