[Darren] Today, Tim and I have made
a feijoada with black beans, {\an8}crispy pig's ears, and a roulade of braised pork belly
as well as braised pork shoulder. {\an8}On the outside, we have
the traditional elements of citrus, and then we have pickled onions as well. I love the presentation where you see it,
and it's the stew in the middle, and it's shared, and there's all
these side dishes, so we wanted to kind of show that, just so we have all the different
traditional garnishes -presented in a way that's different.
