How long did you cook the lobster? We blanched the lobster 30 seconds, and then we poached one more minute, a minute and a half. Lobster's a really difficult ingredient to handle. But the execution of the cook
on the lobster was perfect. The fried quail egg on top
has a great effect of that egg yolk kind of exploding out, adding another layer of unctuous richness. But is it a pumpkin-forward dish? I wish it would've have had maybe
a little bit more pumpkin flavor, but it showed a lot of technical ability. Okay. Thank you, Chef. All right, Chef, before you make
