I left Australia when I was 20
because I wanted to further myself and be one of these great chefs. I had to sacrifice
to get where I wanted to be. I won a Michelin star in 2001
and my second star in 2003, and then just recently my restaurant
in Hong Kong won its first Michelin star. It feels like this is
kind of completing my journey. I just need to get a seat
at that Final Table to prove to everybody
that I'm a chef of that level. [Andrew] Chefs,
our nine masters of cuisine have all changed
the culinary landscape forever, and along the way they have each
created a dish that is their legacy. And here are those nine signature dishes. [cheers and applause] [whistling]
