I think the pork cooked extremely well. I also love the grilled nopal. It's a nice contrast, the fatty from
the pork and the acidity of the nopal. Thank you. I'm especially impressed
with the almond puree. It's nice to see the French influence and
how it's not that far away from Mexico. Kind of reminds me of home. I personally think that could have a
little bit more nopal. The challenge was about nopal, but I do get that we come from
different backgrounds. You did a beautiful job of adapting your own cooking style
