In overall, the dish is
incredibly well-balanced. The bonito's really coming through, but it's a very delicate flavor. Also, the wasabi, it does add to the bites of freshness. And the mushrooms with the peas, it's not something I would typically put
with them, but it definitely captures the spirit of
what we're trying to achieve, which is making the pea
the star of the dish. However, there's a lot happening around the dish. The vegetables overtake
