with baked bean puree. We put a little touch of chipotle
in the baked beans. Being from Mexico,
I'm a big fan of chipotle. Of course,
a little bit of sweetness to it. {\an8}And we have a back bacon foam. Why did you decide
to do the egg like that? It's a little bit different,
a little bit more fine dining. We say egg soufflé because
we whisk the egg white, and it's a little bit more fluffy. And the yolk and the egg white, they have two temperatures
different to cook. I keep the egg whites cooked, and the egg yolk is runny inside. I must admit, you know,
in the job that I do, I get new presentations of things
all the time. And I become a little bit suspicious
when the new techniques are brought in. And the question in my head is, "Yes, but does it make it taste nice?"
