Well. Very good pithivier. The stuffing is well balanced
between sweetness, freshness, too. The pieces of foie gras
melt-in-the-mouth. But I have a problem with this sauce. I just think that the sweetness
dominates. I think they do an amazing job, because adding crunchiness
in Hare à la Royale, which is something really soft,
was really a brilliant idea. And the crunchiness of the puff pastry
is really there. So that's perfect. Thank you so much. [Esdras] This was
the hardest challenge by far. I thought Japan was hard.
Japan was easy. But then I look at the plate
and it's beautiful. The flavor is there. It was worthwhile losing my head
over this preparation
